Granola cookies

Hearty, energizing, and healthy, these granola cookies are somewhere between dessert and an afternoon pick-me-up. They’re delicious and full of proteins and energy to fuel you forward. My mom’s recipe, so you know it’s good :).

Ingredients:

  • ½ cup butter, room temp
  • ½ cup brown sugar
  • 1 egg
  • 1 egg white
  • ½ teaspoon vanilla
  • 1 teaspoon grated orange or lemon rind
  • ½ cup flour
  • 1 ½ cups oatmeal
  • ½ cup sunflowers seeds
  • ¼ cup sesame seeds
  • ½ cup grated carrot
  • ½ cup dried cherries, unsweetened
  • ½ cup shredded coconut
  • ½ cup finely chopped crystallized ginger
  • ½ cup pecans
  • ½ cup dark chocolate chips

Instructions:

At home: Preheat oven to 375 degrees. Mix butter and brown sugar in a mixer until incorporated. Add egg, egg white, vanilla and rind. Stir in flour, mix. Add oats, sunflower seeds, sesame seeds, and carrots. Fold in cherries, coconut, nuts, crystallized ginger, and chocolate chips. Place spoonfuls on un-greased cookie sheet. Bake 10 minutes or until done. Cool completely, then pack in a container, separating layers with paper towel.

Note: These cookies are a choose-your-own-adventure deal – you are welcome to swap out any of the folded in ingredients (cherries, coconut, nuts, ginger, chocolate chips) with others if you’d like. Take this as a baseline and run with it!
