Breakfast Tacos

Hearty, filling, and packed with flavors including a little crispy cheese, these will be your new breakfast staple. They’re a great car camping or backpacking breakfast.

Serves 2.

Ingredients:

  • 4 small tortillas
  • ½ cup shredded cheddar cheese
  • 4 eggs
  • 6 Tbsp dehydrated refried beans (or canned)
  • ½ avocado
  • 4 Tbsp green salsa (I make a tomatillo avocado salsa)

Car camping instructions:

At home: Measure out ingredients.

At camp: Scramble eggs. Rehydrate the refried beans by pouring boiling water over them until just covered and letting them sit for 5 minutes, covered. Or, if you are using canned refried beans, heat in a pot until warm. Slice avocado. Using a nonstick pan, put 1/8 cup cheddar directly on the pan and wait for it to melt and sizzle. Then put a tortilla on top, and wait for the cheese to adhere to the tortilla (you can also press down on the tortilla, or move it around slightly to encourage adhesion). Once it’s ready you should be able to pick up the tortilla and the cheese will be stuck to it. If it doesn’t work, you probably didn’t wait long enough. Fill tortilla with egg, and top with salsa, refried beans, and avocado.

Backpacking instructions:

At home: Dehydrate salsa and grind into a powder or chop into small pieces in a food processor. Measure out egg powder, note how much water to add.

At camp: Mix water in with the salsa powder the night before, and store in a leak-proof container, or double-bag. In the morning, mix egg powder with cold water and stir until combined. Cook eggs until scrambled. Rehydrate the refried beans by pouring boiling water over them until just covered and letting them sit for 5 minutes, covered. Slice avocado. Using a nonstick pan, put 1/8 cup cheddar directly on the pan and wait for it to melt and sizzle. Then put a tortilla on top, and wait for the cheese to adhere to the tortilla (you can also press down on the tortilla, or move it around slightly to encourage adhesion).
