A choose-your-own-adventure meal with plenty of filling ideas. For bigger groups, I like to bring a few different flavor combinations and have people choose and stuff their own pita.
Serves 4.
Ingredients:
- 4 pitas (1 per person)
- Pesto or hummus, or both
- 1 jar roasted red peppers, sliced
- 1 package pre-sliced mozzarella
- a couple tomatoes, sliced
- a couple handfuls spinach
- Crumbled goat cheese or feta
- Olive oil & balsamic vinegar
- Anything else you think would be good! (some other fun ideas – strawberries, roasted eggplants, apple, craisins, crispy onions)
Instructions:
At camp: Slice roasted red peppers and tomatoes. Prep and lay out filling options. Stuff and enjoy!
