This curry-spiced chicken salad is an amazing pick-me-up lunch after a hard morning hike, or as a dinner. It’s got a nice balance of sweet and spicy, and the perfect crunch to keep it fresh.
Serves 2.
Ingredients:
- 1 packet chicken in foil
- 2.5 oz ranch
- ¼ cup craisins
- ¼ cup cashews
- ½ Tbsp curry powder
- ½ tsp ground cumin
- ¼ tsp cayenne pepper
- ⅛ tsp salt
- ¼ apple, diced
- 2 pitas
Instructions:
At home: Combine spices in a small ziploc. Combine craisins and cashews in a separate ziploc.
On the trail: Mix the ranch with the spices. Drain foil packet of chicken, then add chicken to ranch mixture and stir until combined. Then add craisins, cashews, and diced apple. Cut pitas in half, and stuff with chicken salad.
